I had planned on making today my official keto start day, but the wonderful Vegan Keto Madi suggested a #SundayStart in our FB group. Since I had started prepping meals Saturday night, I said I was in.
So, what have I been eating? I always start the morning with my 30 oz jar of hot lemon water and an americano with a tablespoon of canned coconut cream. (Side note: I etched this message on an old peanut butter jar because I needed a reminder to hydrate. Also, that’s my fat boy, Paco, in the background.)
I had noatmeal (get it? no-oatmeal!) with Garden of Life Raw Meal added in for breakfast, and nooch-crusted tofu and asparagus for lunch both days (warmed up the first day and cold today because I was super hungry). Yesterday I also included an arugula and radish salad with cilantro “ranch” and a homemade café au (almond) lait with some added coconut oil with lunch. Yesterday’s dinner was Gardein chick’n and chard sauteed in Earth Balance and topped with avocado with 1/3 cup dairy-free chocolate Halo Top with added cocoa powder and a pinch of pink salt, and tonight’s was three Lightlife veggie dogs with Creole mustard and a serving of a variation of this crack slaw (double the oil, minus the nuts, plus hemp seeds). I was still way under my fat goal after tonight’s dinner, so I just finished making (and eating!) these fat bombs with peanut butter instead of almond butter. Luckily, they’re the shit and I’ll be happy eating one for dessert most nights if I need to up my fat.

As far as how I’m feeling? Pretty damn good! I wasn’t hungry last night when it came to dinner time… so I smoked some weed. I know, I know. But it worked! I got hungry enough for dinner AND dessert. Today was the opposite. I walked 6 miles on the treadmill at a 6.0 incline before eating anything and I was freaking RAVENOUS by the time I was done. Luckily my noatmeal was ready and waiting for me.
My water intake has been… ok. About 100 ounces yesterday and only 80ish today. I need to work on that. I also need to work on planning and prepping more meals. I portioned out some crack slaw for the rest of the week, and I still have two days worth of noochy tofu and asparagus in the fridge. I’ve also put together a bunch of jars of the dry ingredients for noatmeal so I just need to add that to a pot with water and coconut oil in the morning.
Whew! That was kind of a lot of information and not a lot of fun photos. I’ll work on that, too.
